This is a manju made from a new variety of millet developed by Iwate Prefecture. It is a millet manju whose dough is 100% made with a new millet variety called “Yui Kogane”, which is rich in the healthy ingredient lutein. No coloring agents are used in order to take advantage of the bright yellow color of this new millet variety. Once you bite into the millet and enjoy its bubble wrap texture, the gentle sweetness of the bean paste spreads throughout your mouth. A student at Iwate University came up with the name “Fireflies’ Behinds.” Iwate Prefecture has beautiful mountains and crystal clear water, and is home to many fireflies. The yellow color of the manju’s dough is reminiscent of a firefly’s light.
